Description
Enjoy this wonderful healthy pasta as a side or as the main dish. Serve it with a side salad and some garlic bread/toast.
Ingredients
1 lb. linguine or spaghetti
6 large ripe Roma tomatoes
4 green onions
3 large garlic cloves, minced
12 large basil leaves, thinly sliced, plus more for garnish
1/2 c. pasta cooking water, reserved
2 T. olive oil
Parmesan cheese, grated
salt, to taste
black pepper, to taste

Cook pasta to al dente in well salted boiling water according to package directions, about 9 minutes.
While pasta is cooking, wash and dice the tomatoes; wash and slice the onions thinly.
Place tomatoes with their juices, onions, basil, garlic, oil, salt and pepper, to taste in a large bowl.
When pasta is done, remove from heat; drain, reserving a little cooking water; pour hot pasta onto the other ingredients; toss; grate in fresh Parmesan cheese as desired; toss to coat. If needed for the sauce, stir in a bit of reserved pasta water, as needed.
If you would like it browned on top, place in the preheated broiler for a bit.
Serve with a little thinly sliced basil and freshly shaved or grated Parmesan cheese, to garnish.
**Serve with grilled chicken or garlic shrimp, to make it even more satisfying.
