4 fresh bratwurst, your favorite
2 cans beer, your favorite
1 package/can refrigerated crescent dinner rolls
2 - 4 T. whole or spicy coarse-grained mustard
4 oz. smoked Cheddar cheese, sliced
1 c. sauerkraut, warmed and well drained on paper towels
Place bratwursts in a medium pot; pour in beer; bring to a simmer. Simmer 10 minutes over medium heat; cover; remove from heat; let sit 5 minutes to continue cooking through.
Meanwhile, preheat oven to 350 degrees. Line a baking sheet with parchment paper or aluminum foil.
Roll out crescent rolls on parchment paper; spread mustard on each crescent roll.
When brats are done cooking, remove from beer; cool for a few minutes. Cut/slit brats in half down the middle, but not quite all the way through. Add a cheese slice to each brat.
Add a cheese-stuffed brat to the wide end of each crescent roll; roll up.
Bake according to package directions, about 14 minutes.
Serve hot with sauerkraut, if desired.
