You may need to double this recipe if you want leftovers. They are very moist, tender and so juicy. They will definitely become a favorite with your family.
2 eggs, beaten
1 c. crushed buttery round cracker crumbs, like Ritz crackers
1/2 t. garlic salt
freshly ground black pepper, to taste
4 skinless, boneless chicken breast halves
1/2 c. butter, cut into pieces
butter flavored cooking spray
Preheat oven to 375 degrees. Spray a 9 x 13 inch baking dish with a butter flavored cooking spray.
Wash chicken, drain and pat dry with paper towels.
Whisk eggs in a bowl. Place cracker crumbs in a separate shallow bowl; stir in garlic salt and pepper in the cracker crumbs. Dip chicken, first in the eggs, then dredge in the cracker crumb mixture to coat.
Arrange chicken in the baking dish; place pieces of butter around the chicken.
Bake 40 minutes, or until chicken is no longer pink and juices run clear.
