Avocado and bacon lovers will devour these avocados stuffed with crispy bacon, croutons, chopped tomatoes and lettuce. Even people who aren't so crazy about avocados will love them. They make a great light lunch in just a few minutes.
4 strips thick cut bacon
1 c. fresh bread cubes (sourdough, or other crusty bread)
1 c. tomatoes, chopped
1 c. romaine lettuce, chopped and loosely packed
2 T. mayonnaise
3 - 4 large ripe avocados
salt, to taste
freshly ground black pepper, to taste
Wash tomatoes; chop. Wash and drain lettuce; chop. Rinse avocados and dry.
In a skillet over medium heat, cook bacon about 5 minutes on each side until crispy. Place bacon slices on a paper towel lined platter to drain and cool.
Place bread cubes in the skillet in the bacon fat; cook about 5 minutes until the bread cubes are golden brown and crispy, stirring occasionally.
Chop bacon into small pieces; place in a bowl with the browned croutons, tomatoes, and romaine. Stir to coat with mayonnaise; season with salt and pepper, to taste.
Cut avocados in half; remove the pits; season the tops with salt. Place spoonfuls of the BLT mixture into each avocado.
Serve immediately.
Makes 8 halves.
**Store bought croutons can be substituted for the homemade, if desired.
