Description
Avocado and bacon lovers will devour these avocados stuffed with crispy bacon, croutons, chopped tomatoes and lettuce. Even people who aren't so crazy about avocados will love them. They make a great light lunch in just a few minutes.
Ingredients
- 4 strips thick cut bacon
- 1 c. fresh bread cubes (sourdough, or other crusty bread)
- 1 c. tomatoes, chopped
- 1 c. romaine lettuce, chopped and loosely packed
- 2 T. mayonnaise
- 3 - 4 large ripe avocados
- salt, to taste
- freshly ground black pepper, to taste
Steps
- Wash tomatoes; chop. Wash and drain lettuce; chop. Rinse avocados and dry.
- In a skillet over medium heat, cook bacon about 5 minutes on each side until crispy. Place bacon slices on a paper towel lined platter to drain and cool.
- Place bread cubes in the skillet in the bacon fat; cook about 5 minutes until the bread cubes are golden brown and crispy, stirring occasionally.
