Make a healthy meal for lunch or dinner with these wonderful avocados stuffed with tuna salad. They are so delicious you'll wonder why you didn't make them sooner.
4 avocados, halved and pitted
3 (4.5 oz.) cans tuna, drained (solid albacore tuna packed in olive oil tastes best)
1 red bell pepper, diced (or chopped tomatoes)
1 jalapeno, minced (or green chilies)
1 c. cilantro leaves, roughly chopped, optional
freshly squeezed juice of 1 lime
salt, to taste
black pepper, to taste
Wash and dry avocados. Wash bell pepper; cut off top and discard; remove and discard seeds and membranes; dice. Rinse cilantro; drain; chop.
Cut avocados in halves across; remove and discard pits; scoop out some avocado from the pitted area to make a bigger "bowl" area. Place the scooped out avocado into a medium-sized mixing bowl and mash it with a fork.
Drain tuna; chop into smaller pieces; add tuna, diced bell pepper, jalapeno, and cilantro to the bowl; stir. Pour lime juice over the mixture; stir until everything is well mixed.
Spoon tuna mixture into the avocado bowls. Season with salt and pepper.
Serve.
Makes 8 halves.
