Fast and Easy Spaghetti with Meat Sauce

Ingredients

4 large vine-ripened tomatoes, halved
2 T. freshly squeezed lemon juice
1 1/2 T. tomato paste
3 garlic cloves, thinly sliced
1/4 serrano chile, finely chopped
salt, to taste
black pepper, to taste
1 lb. 80 % lean ground beef
10 oz. spaghetti pasta or angel hair
10 basil leaves, torn

Wash tomatoes; drain, slice in halves. Rinse basil leaves; dry; tear into pieces.

Place a box grater inside a medium sized bowl; rub cut side of the tomatoes over lthe arge holes of the grater to make pulp; discard skins.

To pulp, add lemon juice, tomato paste, garlic, and chopped chile; season with salt; set aside.

Heat a large heavy skillet over high heat; add beef; cook, stirring frequently and crumbling beef, for about 4 minutes, or until just cooked and browned; reduce heat to medium-high; stir in tomato mixture. Cook, stirring occasionally, for about 6 minutes, or until mixture has reduced by about one-fourth.

Meanwhile, bring a large heavy pot of well salted water to a boil over high heat; add pasta; cook to al dente, stirring often, about 8 minutes, or until tender but still firm to the bite; drain.

Add cooked pasta to sauce; cook about 1 minute, or until sauce thickens slightly and adheres to pasta. Remove from heat; stir in torn basil; sason with salt and pepper. Serve.

To prepare in advance: tomato mixture can be made up to 2 hours ahead, covered and kept at room temperature.
