When company comes, you want to make a dish that is good but easy and this one fits the bill. It isn't beautiful or fussy, just down right delicious. Serve with a salad and garlic toast.
8 oz. dry penne pasta, ziti, egg noodles or favorite pasta
1 lb. lean ground beef
1/4 c. diced onion
1/4 c. diced green bell pepper
16 oz. tomato sauce
salt and pepper, to taste
garlic powder, to taste
Italian seasoning, to taste
1 c. cottage cheese
8 oz. cream cheese, softened
1/3 c. sour cream
1/2 c. sliced green onions
1/2 c. finely shredded Italian cheese blend or Mozzarella cheese
freshly chopped parsley, for garnish
Preheat oven to 350 degrees. Spray a 2 quart casserole dish with non-stick cooking spray.
Cook pasta according the package directions in well salted boiling water. Drain.
While pasta is cooking; brown and stir ground beef, onion and bell pepper until the meat is no longer pink; discard any grease; add tomato sauce and pasta to the meat mixture; add seasonings, to taste; stir.
In a medium bowl, combine cottage cheese, cream cheese, sour cream, and green onion; season, if desired.
Spread half of the meat-pasta mixture into the bottom of the casserole dish; cover with the cottage cheese mixture; add the remaining meat-pasta mixture, spreading to cover evenly. Cover; bake 30 minutes.
Remove from oven; top with the Italian cheese; return to oven; bake uncovered 10 minutes or until cheese is melted. Garnish with chopped parsley. Cool slightly before serving.
