Enjoy a light meal or a side salad with this delicious, healthy option. You and your family will love the Tex-Mex flavors.
Ingredients
- 10 oz. pkg. torn romaine lettuce
- 1 c. frozen corn, thawed
- 1 large tomato, chopped (cherry or grape tomatoes can be substituted)
- 4-1/2 oz. smoked turkey breast, coarsely chopped
- 15 oz. can no-salt-added black beans, rinsed and drained
- 1 c. shredded sharp Cheddar cheese
- 1/2 c. chopped red onions
- 1/2 c. lite Ranch dressing
- 1/2 c. salsa, thick and chunky
- avocado slices, for garnish
Steps
- Wash/rinse lettuce; drain; dry. Rinse tomato; chop.
- Cover a plate or platter with lettuce; top with next 6 ingredients.
- Mix together Ranch dressing and salsa; drizzle over salad just before serving. Top with avocado slices, if desired.
