Give yourself a treat and make a healthy white fish. It's delicious seafood and it is simple to make.
2 T. olive oil
1 c. panko breadcrumbs
2 T. chopped fresh parsley
2 t. grated lemon rind
1 t. minced garlic
2 T. Old Bay Seasoning
2 lb. Halibut fillets (cut the larger side into equal pieces)
1 t. salt
2 T. butter, melted
Preheat oven to 400 degrees. Grease a baking dish.
Combine panko, parsley, grated lemon rind, and garlic in a small bowl to make the breadcrumb mixture.
Place fillets on prepared baking pan; sprinkle evenly with Old Bay Seasoning. Spoon breadcrumb mixture evenly onto fillets, pressing down gently. Drizzle each with the melted butter.
Bake 15 – 17 minutes or until breadcrumbs are golden.
Serve.
