Scrambled eggs with avocado, cheese and onion are so delicious together. Serve with toast and your favorite sides.
1 small onion, grated or diced small, your favorite
1/2 firm, ripe avocado
4 large eggs
2/3 c. grated extra-sharp Cheddar cheese, about 2 oz.
salt and pepper, to taste
2 t. unsalted butter
freshly chopped cilantro sprigs, for garnish
Rinse, halve and peel avocado; cut into 1/4 inch pieces. Peel and chop onion.
In a bowl, whisk together eggs and cheese; season with salt and pepper.
In a non-stick skillet, heat butter over moderately high heat until foam subsides; sauté onion, stirring, until just beginning to soften, about 2 minutes. Add egg mixture; cook, stirring constantly, until eggs are just set, about 1 minute.
Remove skillet from heat; stir in avocado.
Serve. Garnish with cilantro.
