Scrambled eggs with avocado, cheese and onion are so delicious together. Serve with toast and your favorite sides.
Ingredients
- 1 small onion, grated or diced small, your favorite
- 1/2 firm, ripe avocado
- 4 large eggs
- 2/3 c. grated extra-sharp Cheddar cheese, about 2 oz.
- salt and pepper, to taste
- 2 t. unsalted butter
- freshly chopped cilantro sprigs, for garnish
Steps
- Rinse, halve and peel avocado; cut into 1/4 inch pieces. Peel and chop onion.
- In a bowl, whisk together eggs and cheese; season with salt and pepper.
- In a non-stick skillet, heat butter over moderately high heat until foam subsides; sauté onion, stirring, until just beginning to soften, about 2 minutes. Add egg mixture; cook, stirring constantly, until eggs are just set, about 1 minute.
