Make this lean beef and pasta dish on those days when you are very busy, but still want a delicious and satisfying meal. There really isn't much preparation to this dish, so it can be ready in no time at all. Serve with a salad and a crusty bread.
1 lb. lean ground beef
1 large onion, chopped, about 1 cup
3 cloves garlic, minced
½ t. dried Italian seasoning, crushed
16 oz. tomato pasta sauce, your favorite homemade or purchased
4 oz. Neufchatel cheese, cubed
3 c. your favorite pasta, cooked without salt, and drained, about 4¼ cups
Cook pasta in unsalted boiling water, according to package directions. Drain; set aside.
Cook beef, onion, garlic and Italian seasoning in a 12 inch skillet over medium-high heat until beef is well browned, stirring to separate meat. Pour off and discard any fat.
To the skillet, stir in tomato sauce and cheese; reduce heat to low; cook 5 minutes or until the cheese is melted, stirring often. Stir in pasta; cook until mixture is hot and bubbling.
