These healthy egg muffins make a great, delicious breakfast for busy people on the go. Just grab one or two and you can be out the door with your breakfast right in your hand.

Ingredients

3 lean breakfast turkey sausage links
5 egg whites
2 whole eggs
1/4 c. skim milk
Salt and pepper, to taste
1/4 c. fresh chopped spinach
1/4 c. shredded sharp Cheddar cheese

Preheat oven to 350 degrees. Grease 6 muffin tin cups with cooking spray or line cups with paper liners.

In a medium skillet, brown sausages on medium-high heat, cooking until sausages are brown and cooked completely through. Cut sausage into 1/2 inch pieces; set aside.

In a large mixing bowl, whisk together egg whites and eggs; whisk in skim milk; season with salt and pepper, to taste; stir in chopped spinach.

Pour egg mixture evenly into muffin cups. Evenly distribute cheese and sausage pieces between muffin cups.

Bake 20 minutes, or until muffins are firm in the center. Remove from oven; gently use a knife to go round each egg.

Serve warm.

Store muffins in refrigerator for 3-4 days. Reheat muffins in the microwave.
