These healthy egg muffins make a great, delicious breakfast for busy people on the go. Just grab one or two and you can be out the door with your breakfast right in your hand.
Ingredients
- 3 lean breakfast turkey sausage links
- 5 egg whites
- 2 whole eggs
- 1/4 c. skim milk
- Salt and pepper, to taste
- 1/4 c. fresh chopped spinach
- 1/4 c. shredded sharp Cheddar cheese
Steps
- Preheat oven to 350 degrees. Grease 6 muffin tin cups with cooking spray or line cups with paper liners.
- In a medium skillet, brown sausages on medium-high heat, cooking until sausages are brown and cooked completely through. Cut sausage into 1/2 inch pieces; set aside.
- In a large mixing bowl, whisk together egg whites and eggs; whisk in skim milk; season with salt and pepper, to taste; stir in chopped spinach.
