This is definitely one of the best grilled cheese sandwiches that you will ever make. It just takes a little bit more time to make an unforgettable sandwich.
2 bread slices, like sourdough or your favorite sandwich bread
2 - 4 slices sliced mozzarella, provolone, fontina or your favorite cheese
2 - 3 T. softened butter, plus extra for greasing pan
2 - 3 T. freshly shredded Parmesan or Asiago cheese
Preheat non-stick skillet to medium-low.
Place cheese slices on a bread slice; top with second bread slice. You can use 2 - 4 slices of cheese for each sandwich.
Generously butter outside of one side of the sandwich,using 1 - 1½ T. butter. You need a thick coating of butter to press the shredded Parmesan cheese into and have most of it stick.
Press around 1 - 1½ T. Parmesan cheese into the buttered bread, pressing so it sticks. Flip sandwich and repeat butter and Parmesan cheese on the second side. Press down on the sandwich with a spatula to adhere cheese, some cheese may fall off, just press it back on or throw it on top of the sandwich when it's in the skillet.
Lightly butter the preheated skillet; place the sandwich in the pan; cook on medium to medium-low heat until golden on the one side. This takes several minutes. Lift a corner and peak at the underside every so often. Flip sandwich and continue to cook until golden and the cheese inside is melted.
