Coconut Shrimp with Orange Marmalade Sauce

Description

You won't be able to think about making shrimp any other way once you make these the first time. They are wonderfully delicious with shredded coconut, Bisquick and seasonings and then dipped in an orange marmalade sauce.

Ingredients

Shrimp:
1/2 lb. medium sized raw shrimp, peeled and deveined
3/4 c. Bisquick
3/4 c. Blue Moon or other hefeweizen beer
1/4 c. all-purpose flour
1/4 t. seasoning salt
1/4 t. cayenne pepper
1/4 t. garlic powder
1 c. shredded coconut

oil, for frying

Dipping Sauce:
1/4 c. orange marmalade
1/2 t. cajun seasoning, or to taste

Shrimp:
Rinse shrimp under cold water; pat dry with paper towels.

Add pancake mix and beer to a shallow bowl; stir until smooth.

In another shallow bowl, mix together flour, seasoning salt, cayenne pepper, and garlic powder.

Add coconut to a third shallow bowl. Using the shrimp's tail as a handle, dip shrimp into flour mixture; shake off excess; dip into batter; dredge in coconut. Repeat with remaining shrimp.

Fry shrimp in 350 degree oil for 45 - 60 seconds on each side, or until golden brown. Drain on a paper-towel-lined baking sheet.

Dipping sauce:
Mix together orange marmalade and cajun seasoning. Add more cajun seasoning to taste, if desired.

Serve shrimp with dipping sauce.
