This low carb casserole is a complete meal with hamburger, sausage, vegetables and potatoes in a wonderful cheesy Alfredo sauce. It's a tasty, easy meal that is satisfying and one your family will ask for over and over again.
1/2 lb. ground beef
1/2 lb. bulk sausage
1 t. oregano, dried
1 small white onion, chopped
3 fresh cloves garlic, minced
1 T. fresh parsley, chopped
10 - 12 oz fresh broccoli florets
1 red or green bell pepper, cut into strips
2 potatoes, cut into very thin slices
8 oz. block cream cheese, at room temperature
1/2 c. half and half (1/4 c. milk and 1/4 c. heavy cream)
1/2 c. Parmesan cheese, grated
1 t. salt
freshly ground pepper, to taste
8 oz. package shredded Mozzarella cheese, or cheese of your choice
Preheat oven to 350 degrees. Grease a large baking dish or pan.
In a bowl, mix the two meats; season with oregano, salt and pepper.
In a large skillet over medium heat, place the meat mixture; brown; add the onion, parsley and garlic. Cook 3 minutes; drain/discard excess fat.
Meanwhile, steam broccoli until tender and still a little crisp; season with salt and pepper. Repeat this process with potatoes and red bell pepper.
Cheese mixture:
In a large bowl, place the cream cheese; microwave 30 seconds; whisk until creamy and smooth. Gradually whisk in half and half until smooth; stir in Parmesan cheese.
In the prepared baking dish/pan, place layers of one half each of : cheese mixture, potatoes, broccoli, hamburger and red bell pepper. Repeat these layers with remaining half of each of: cheese mixture, potatoes, broccoli, hamburger and red bell pepper.
Adjust seasonings of salt and pepper, if desired. Top with shredded Mozzarella cheese.
Bake 35-45 minutes, until bubbly around edges.
