Description

This low carb casserole is a complete meal with hamburger, sausage, vegetables and potatoes in a wonderful cheesy Alfredo sauce. It's a tasty, easy meal that is satisfying and one your family will ask for over and over again.

Ingredients

• 1/2 lb. ground beef
• 1/2 lb. bulk sausage
• 1 t. oregano, dried
• 1 small white onion, chopped
• 3 fresh cloves garlic, minced
• 1 T. fresh parsley, chopped
• 10 - 12 oz fresh broccoli florets
• 1 red or green bell pepper, cut into strips
• 2 potatoes, cut into very thin slices
• 8 oz. block cream cheese, at room temperature
• 1/2 c. half and half (1/4 c. milk and 1/4 c. heavy cream)
• 1/2 c. Parmesan cheese, grated
• 1 t. salt
• freshly ground pepper, to taste
• 8 oz. package shredded Mozzarella cheese, or cheese of your choice

Steps

1. Preheat oven to 350 degrees. Grease a large baking dish or pan.
2. In a bowl, mix the two meats; season with oregano, salt and pepper.
3. In a large skillet over medium heat, place the meat mixture; brown; add the onion, parsley and garlic. Cook 3 minutes; drain/discard excess fat.
