Ingredients
- 2 pork chops, about 1 lb. total
- 2 t. olive oil
- 1/2 c. hard cider, wine, vermouth, or dry sherry
- 1 T. stone ground mustard
- 1/4 - 1/3 c. heavy cream
- salt, to taste
- freshly ground black pepper, to taste
Steps
- If pork chops are thick, pound them down between layers of plastic wrap to tenderize and cook quickly. Sprinkle chops with a little salt.
- Heat oil in a skillet over medium-high heat until quite hot.
- Cook chops about 5 minutes on each side, just until cooked through and no longer pink; remove to a warmed plate; cover to keep warm.
