Ingredients

2 pork chops, about 1 lb. total
2 t. olive oil
1/2 c. hard cider, wine, vermouth, or dry sherry
1 T. stone ground mustard
1/4 - 1/3 c. heavy cream
salt, to taste
freshly ground black pepper, to taste

If pork chops are thick, pound them down between layers of plastic wrap to tenderize and cook quickly. Sprinkle chops with a little salt.

Heat oil in a skillet over medium-high heat until quite hot.

Cook chops about 5 minutes on each side, just until cooked through and no longer pink; remove to a warmed plate; cover to keep warm.

Add hard cider to the skillet; let liquid bubble away for a couple of minutes, reducing a little bit. Scrape up any brown bits from the skillet to add flavor to the sauce.

Stir in mustard and cream; season with salt and pepper, to taste; heat through.

Serve pork chops the sauce with your choice of potatoes, rice or egg noodles.
