Pulled pork:
Line a 6 qt. slow cooker with a slow cooker liner for easy clean up. Add the pork shoulder and yellow onion; pour in ginger ale; cook on Low 5 hours.

When the pulled pork is tender and is easily shredded with a fork, it’s done. Remove the pork roast from the slow cooker and place it on a large platter; shred with 2 forks. Remove the juice from the slow cooker; place the shredded pork back into the slow cooker. Add in 1 c. BBQ sauce; stir. Add in more BBQ sauce if desired. The meat should be coated but not dripping with sauce. Cover to keep warm while preparing the mac and cheese.

Mac and cheese:
Preheat oven to 350 degrees; spray a 9×13 casserole dish with non-stick cooking spray.

Bring a large pot of well salted water to a boil over high heat. Add in elbow macaroni; cook just until al dente, according to package directions. Drain pasta; set aside while preparing the cheese sauce.

Add butter to a large skillet over medium heat. When the butter has melted, whisk in flour; slowly whisk in milk until smooth; reduce heat to low; whisk slowly until sauce becomes thick and creamy. Stir in the shredded cheese; stir until completely melted. Turn off the heat; stir in macaroni.

Add macaroni and cheese to the prepared dish; top with the pulled pork; sprinkle on a little extra cheese, if desired.

There will be leftover pulled pork that might not fit in the dish, so don’t be concerned if it does not all get used.

Bake for about 15 minutes to warm the mixture throughout.

Serve, drizzled with extra BBQ sauce, if desired.

Serves 4-6.
