Freshly squeezed lemon juice and zest, along with olive oil, seasonings and garlic season the chicken and new potatoes perfectly. All that you need to wash is a bowl and a baking pan, so clean up is easy.
1 lb. chicken thighs and drumsticks, rinsed and patted dry
1 lb. early/new potatoes, scrubbed and cubed
freshly squeezed juice and zest of ½ lemon, or to taste
1 t. dried oregano
salt, to taste
freshly ground black pepper, to taste
3 garlic cloves, minced
¼ c. olive oil
½ c. chicken stock/broth
Preheat oven to 375 degrees.
In a large bowl, mix together lemon juice, lemon zest, oregano, salt, pepper, garlic and olive oil; add chicken and potatoes; toss until coated. Transfer to a rimmed sheet pan. Add chicken stock/broth, cover with foil.
Bake 20 minutes. Uncover; raise heat to 390 degrees; continue baking for 25-35 minutes or until chicken and potatoes are done. It could also be broiled 3-5 minutes until golden.
