Description
These mini-meatloaves are so elegant looking, they are good enough to serve to company. They are just as easy to make as your regular meatloaf too. Serve with mashed potatoes and a vegetable.
Ingredients
- 1 T. extra-virgin olive oil
- 1 onion, finely chopped or grated
- 1 garlic clove, minced
- 2 carrots, finely minced
- 1 celery stalk, finely minced
- 2 T. Worcestershire sauce
- 1 T. tomato paste
- 2 lb. ground beef or mixture of ground beef and ground pork
- 1/2 c. breadcrumbs
- 2 eggs, beaten
- kosher salt
- freshly ground black pepper, to taste
- 1/3 c. ketchup
- 2 t. brown sugar
- 1 T. apple cider vinegar
- 6 slices thin-cut bacon
- parsley, for garnish
Steps
- Preheat oven to 375 degrees. Lightly spray a baking sheet with non-stick cooking spray.
- Heat olive oil in a large skillet over medium heat; sauté onion, carrots, and celery until beginning to soften; stir in garlic; cook until fragrant, about 30 seconds. Turn off heat; add tomato paste and Worcestershire sauce; stir until combined.
- In a large bowl, combine ground meat, breadcrumbs, eggs, and cooked vegetables; season with salt and pepper, to taste.
