Bacon Mini-Meatloaves

Description
These mini-meatloaves are so elegant looking, they are good enough to serve to company. They are just as easy to make as your regular meatloaf too. Serve with mashed potatoes and a vegetable.
Ingredients
1 T. extra-virgin olive oil
1 onion, finely chopped or grated
1 garlic clove, minced
2 carrots, finely minced
1 celery stalk, finely minced
2 T. Worcestershire sauce
1 T. tomato paste
2 lb. ground beef or mixture of ground beef and ground pork
1/2 c. breadcrumbs
2 eggs, beaten
kosher salt
freshly ground black pepper, to taste
1/3 c. ketchup
2 t. brown sugar
1 T. apple cider vinegar
6 slices thin-cut bacon
parsley, for garnish

Preheat oven to 375 degrees. Lightly spray a baking sheet with non-stick cooking spray.
Heat olive oil in a large skillet over medium heat; sauté onion, carrots, and celery until beginning to soften; stir in garlic; cook until fragrant, about 30 seconds. Turn off heat; add tomato paste and Worcestershire sauce; stir until combined.
In a large bowl, combine ground meat, breadcrumbs, eggs, and cooked vegetables; season with salt and pepper, to taste.
Shape 6 patties, each about 4 inches wide, to make mini-meatloaves. Place on prepared baking sheet; wrap each patty with a bacon slice.
Whisk together ketchup, brown sugar, and apple cider vinegar; spoon this glaze onto each mini- meatloaf.
Bake 30-45 minutes, until the bacon and meat are cooked through. The bacon won’t get very crispy, but it will be delicious.
Serve hot garnished with parsley on top and with your favorite sides.
