Celebrate National Meatloaf Day on October 18 with a great, classic recipe. It's made from ground beef, onion and bell pepper, with egg, ketchup and breadcrumbs that topped off with a sweet caramelized glaze from ketchup and brown sugar.
2 lb. ground beef
1 onion, finely chopped or grated
1 green bell pepper, finely chopped
1 egg, beaten
3/4 c. Italian-style breadcrumbs
1/2 t. black pepper
1 c. ketchup, divided
1 T. brown sugar
Preheat oven to 350 degrees. Grease a 9 x 5 inch loaf pan bottom and sides with non-stick cooking spray.
In a large bowl, combine ground beef, onion, green pepper, egg, breadcrumbs, 3/4 c. ketchup, and pepper. Mix ground beef mixture with your hands without over-mixing; place in prepared loaf pan.
Bake 1 hour; spoon on remaining ketchup, sprinkle with brown sugar; bake 10 - 15 minutes, or until no pink remains. Drain off grease and discard.
Lift out of loaf pan with a spatula; place on a platter; slice; serve.
