Make a delicious and easy 300 calorie loaded potato soup in the slow cooker. Serve topped with your favorite garnishes, but remember that they may add more calories.
4 lb. new potatoes, peeled and cut into 1/4-inch-thick slices
1 small onion, chopped
2 - 14 oz. cans chicken stock/broth
2 t. salt
1/2 t. pepper
2 c. (1 pint) half-and-half
Optional toppings: shredded Cheddar cheese, crumbled bacon, green onion slices
Scrub potatoes; peel; cut into 1/4 in. thick slices. Peel onion; chop.
Line a 6 quart slow cooker with a slow cooker liner for easy clean up. Spray liner with non-stick cooking spray.
Layer potato slices in the slow cooker; top with chopped onion.
In a bowl, stir together chicken stock/broth, salt, and pepper; pour over potato and onion mixture. The stock won't completely cover the potatoes and onion. Cover; cook on High 3 - 5 hours or until potatoes are tender.
Mash mixture with a potato masher; stir in half-and-half. Cover; cook on High 20 minutes or until mixture is thoroughly heated.
Serve with desired toppings.
