Description
Make a delicious and easy 300 calorie loaded potato soup in the slow cooker. Serve topped with your favorite garnishes, but remember that they may add more calories.
Ingredients
- 4 lb. new potatoes, peeled and cut into 1/4-inch-thick slices
- 1 small onion, chopped
- 2 - 14 oz. cans chicken stock/broth
- 2 t. salt
- 1/2 t. pepper
- 2 c. (1 pint) half-and-half
- Optional toppings: shredded Cheddar cheese, crumbled bacon, green onion slices
Steps
- Scrub potatoes; peel; cut into 1/4 in. thick slices. Peel onion; chop.
- Line a 6 quart slow cooker with a slow cooker liner for easy clean up. Spray liner with non-stick cooking spray.
- Layer potato slices in the slow cooker; top with chopped onion.
