Make a healthier meatloaf from ground chicken or turkey instead of beef. It's a great alternative and is just as delicious. Serve with your favorite sides.
1 lb. ground chicken or turkey
1 egg
1/4 c. breadcrumbs or panko
1/2 t. dried basil
1/2 t. dried thyme
1/2 t. dried oregano
2 cloves garlic, finely minced
1 small onion, grated
1/2 t. kosher salt
1/4 t. freshly ground black pepper
1/2 c. grated Parmesan cheese
1/2 c. pasta sauce
1/2 c. shredded Italian cheese blend
2 T. chopped parsley, for garnish
Preheat oven to 350 degrees. Lightly spray a loaf pan with cooking spray; set aside.
In a large bowl, combine ground meat, egg, breadcrumbs, thyme, oregano, basil, garlic, onion, salt, pepper and Parmesan cheese. Don't over mix the mixture or it will get tough.
Place the mixture in the prepared loaf pan and form into a loaf; top meatloaf with pasta sauce.
Place loaf pan on a baking sheet. Bake 40-45 minutes.
Remove meatloaf from oven; sprinkle top with remaining shredded Italian cheese. Place meatloaf back in the oven; bake until cheese is melted.
Remove meatloaf from the oven; allow to rest for 5-10 minutes before slicing.
Serve, garnished with parsley, if desired.
Makes 1 loaf.
