Bahama Breeze Rum and Coke Ribs

Description

Make these wonderful baby back ribs at home and get the same fantastic taste that you get in the restaurant. Serve with your favorite sides.

Ingredients

Rum and Coke BBQ Sauce:
12 oz. can of Coke
freshly squeezed juice from ½ lime
¼ c. orange juice
½ t. allspice
1 cinnamon stick
¼ c. cornstarch
¼ c. water
½ c. spiced rum (Captain Morgan’s or Meyers’s)
½ c. BBQ sauce, your favorite

BBQ Ribs:
2 racks baby back ribs, each approximately 1 1/2 lb.
salt and pepper as needed, or your favorite BBQ seasoning
Rum and Coke BBQ Sauce, chilled
1 c. water

Rum and Coke BBQ Sauce:
Combine Coke, lime juice, orange juice, allspice and cinnamon in a small pot; bring to a boil; reduce heat: simmer for 2 minutes.

Combine cornstarch and water; add to simmering liquid; continue to simmer while stirring with a whisk for 5 minutes; take off of heat. Add rum and BBQ sauce; strain; refrigerate.

Preheat oven to 250 degrees.

BBQ Ribs:
Season ribs generously with seasoning; baste with Rum and Coke BBQ sauce.

Place ribs on a sheet tray with sides, both should fit on one, with the bones facing up; add approximately 1 c. water to tray. Wrap ribs and tray tight with plastic wrap. Yes, plastic wrap! Then wrap it with foil; bake in the oven for 2 ½ hours or until ribs are tender; if baking in a convection oven, reduce cook time by 30 minutes.

When ready to finish cooking the ribs, preheat a grill.

When tender, remove from oven; brush with Rum and Coke BBQ Sauce; place on a hot grill to get a nice char, brushing frequently while grilling and before removing the ribs from the grill.
