Description
Brown rice is the base for this healthy, protein rich meal, along with a fried egg, sliced scallions, and avocado slices and a bit of hot sauce. This easy, quick meal will surely not disappoint you at lunchtime.
Ingredients
- 4 scallions or green onion, thinly sliced
- 2 c. cooked brown rice
- 1 t. red wine vinegar
- kosher salt, to taste
- freshly ground pepper, to taste
- 3 T. olive oil
- 4 large eggs
- 1 avocado, sliced
- hot sauce, for serving
Steps
- Cook rice according to package directions.
- Peel and slice scallions. Peel and slice the avocado.
- Mix scallions, rice, and vinegar in a small bowl; season with salt and pepper.
