Description

Brown rice is the base for this healthy, protein rich meal, along with a fried egg, sliced scallions, and avocado slices and a bit of hot sauce. This easy, quick meal will surely not disappoint you at lunchtime.

Ingredients

  • 4 scallions or green onion, thinly sliced
  • 2 c. cooked brown rice
  • 1 t. red wine vinegar
  • kosher salt, to taste
  • freshly ground pepper, to taste
  • 3 T. olive oil
  • 4 large eggs
  • 1 avocado, sliced
  • hot sauce, for serving

Steps

  1. Cook rice according to package directions.
  2. Peel and slice scallions. Peel and slice the avocado.
  3. Mix scallions, rice, and vinegar in a small bowl; season with salt and pepper.
