Brown rice is the base for this healthy, protein rich meal, along with a fried egg, sliced scallions, and avocado slices and a bit of hot sauce. This easy, quick meal will surely not disappoint you at lunchtime.
4 scallions or green onion, thinly sliced
2 c. cooked brown rice
1 t. red wine vinegar
kosher salt, to taste
freshly ground pepper, to taste
3 T. olive oil
4 large eggs
1 avocado, sliced
hot sauce, for serving
Cook rice according to package directions.
Peel and slice scallions. Peel and slice the avocado.
Mix scallions, rice, and vinegar in a small bowl; season with salt and pepper.
Heat oil in a non-stick skillet over medium-high heat. Crack eggs into skillet; season with salt and pepper; cook until whites are set around the edges, about 1 minute. Flip eggs; cook to desired doneness, about 30 seconds for a runny yolk or longer for a harder yolk.
Divide rice among bowls; top with cooked eggs, avocado, and hot sauce.
