This great pot roast can be cooked in the oven or the crockpot. Serve this wonderfully delicious roast with mashed potatoes and your favorite vegetable.
3 - 4 pound chuck roast
1/2 t. salt
1/4 t. black pepper
2 T. vegetable oil
1 large onion, chopped
2 c. beef stock/broth
2 T. Gravy Master
2 T. butter
1 lb. cremini mushrooms, sliced or white button mushrooms
1/2 t. salt
Oven directions:
Pat roast dry with paper towels; season with salt and pepper. Add vegetable oil to a large oven-proof Dutch oven; sear roast on all sides until brown. Add chopped onion; add beef stock/broth; add Gravy Master.
Preheat oven to 350 degrees.
Bake the roast for 30 minutes per pound of beef. Remove the roast from the oven; saute mushrooms in butter; add salt to the mushrooms while sauteing. When mushrooms are cooked through, add them to the roast.
Crockpot Directions:
Pat roast dry with paper towels; season with salt and pepper; add vegetable oil to a large skillet; sear roast on all sides until brown.
Place roast in crockpot. Add onion, along with beef broth and Gravy Master.
Cook for about 6 hours on Low setting. When cooking is almost done, saute sliced mushrooms in butter; add salt to the mushrooms while sauteing. When mushrooms are cooked through, add them to the roast.
Serve.
6-8 servings.
