Everything is already thought out for you in this fantastic meal. It will take a little less than 1 hour to have this wonderful whole meal on your table, from the meatloaf, to the creamy potatoes and green beans!
Meatloaf:
cooking spray
20 reduced-fat buttery-taste crackers
1 lb. lean ground beef, 7% fat
1 c. frozen seasoning blend vegetables (onions, bell peppers, and celery)
1/2 c. reduced-fat milk
2 eggs
1 t. meat seasoning
1/4 t. salt
1/8 t. pepper
1/4 c. ketchup
1/4 c. maple syrup
Creamy Potatoes:
2 c. water
1/2 c. reduced-fat milk
2 T. garlic butter
4.9 oz. box au gratin potato mix
1/4 t. salt
1/8 t. pepper
Italian Green Beans:
16 oz.bag frozen green beans
14.5 oz. can diced Italian-style tomatoes
1 t. seasoned salt
Order of Preparation:
1. Prepare meatloaf and begin to bake:10 minutes.
2. 10 minutes into baking time, prepare potatoes and begin to simmer: 35 minutes.
3. Complete meatloaf and potatoes, prepare beans, and serve:10 minutes.
Meatloaf:
Preheat oven to 375 degrees. Coat 9 x 4 inch loaf pan with cooking spray.
Place crackers in a large zip-top bag; crush finely. Combine all ingredients, except for ketchup and syrup, in medium bowl, mixing just until combined, being careful to not over-mix. Place in pan; shape into a loaf.
Bake 40-45 minutes or until internal temperature reaches 165 degrees or higher, using a meat thermometer to accurately ensure doneness.
Combine ketchup and syrup in a small bowl. Five minutes before baking time is complete, pour mixture over meatloaf; finish bake time. Let stand 5 minutes before serving.
Creamy Potatoes:
Place water, milk, and garlic butter in medium saucepan; bring to boil on High.
Stir potatoes, seasoning from the flavor packet, salt, and pepper into boiling water. Cover, reduce to medium-low; simmer 20 minutes, stirring occasionally. Remove from heat; let stand 5 minutes. Serve.
Italian Green Beans:
Combine all ingredients in microwave-safe bowl; cover; microwave on High power for 10 minutes, stirring once. Stir; serve.
