Get many of the flavors of a tasty Cuban sandwich with this casserole. It has meaty ham, apple chicken sausage, cheese, and rice. Serve with toasted Cuban bread or any of your favorite breads.
4 oz. Swiss cheese, cubed
2 T. fresh cilantro, coarsely chopped, divided
2 links apple chicken sausage, 6 oz. total
2 T. extra-virgin olive oil
4 oz. cooked ham, cubed
6.9 oz. box chicken-flavor rice mix, like Rice-A-Roni
1/2 t. Badia Complete seasoning (in the Latin spice aisle)
2 1/2 c. hot water, divided
1/4 c. dill relish
1 t. mustard
Cut cheese into small cubes; chop cilantro; cut sausage into bite-sized pieces.
Preheat large sauté pan on medium-high 2-3 minutes; pour oil into pan; add sausage and ham; cook 2-3 minutes or until lightly browned.
Stir in rice seasoning from box, Complete seasoning, and 1/2 c. hot water; cook; stir 1-2 minutes. Stir in rice, relish, mustard, 1 T. cilantro, and remaining 2 c. hot water; cover; reduce heat to low; simmer 20-22 minutes (NOT removing cover) or until rice is tender and water is absorbed.
Stir in cheese; sprinkle with remaining 1 T. cilantro. Serve.
