Celebrate cooler weather with this comforting and satisfying soup. It's a delicious soup that is full of diced ham, potatoes, carrots, celery, onion, heavy cream or milk and sour cream. Serve it with a crusty bread to soak up all of that wonderful goodnes
7-8 c. Russet potatoes, scrubbed, peeled and diced
1 yellow onion, peeled and diced
2 large carrots, scrubbed and diced
1/2 c. celery, scrubbed and chopped
2-3 c. ham, diced (or 16 oz. packaged cubed ham)
2 t. parsley
1 t. thyme leaves
1/4 t. black pepper, to taste
4 - 5 c. chicken stock/broth
1 t. Kosher salt, or to taste
1/4 c. flour
1- 1/ 1/2 c. heavy cream or whole milk
½ c. sour cream
Optional garnishes: chopped parsley, chopped green onion and/or shredded Cheddar cheese.
Line a crock pot liner to the base of a large 6 quart crock pot for easy clean up.
Add diced potatoes, onion, carrots, celery, ham, parsley, thyme, black pepper and chicken stock to the crock pot. Add salt, to taste a little at a time.
Cover; cook on Low 7 -8 hours or on High 4-5 hours.
Remove about 1/3 of the potato mixture; mash; return mashed mixture to the crock pot. Add flour, cream/milk and sour cream; stir carefully; cover; cook another 15 minutes on High. Season with pepper, to taste.
Garnish with freshly chopped parsley, chopped green onion and/or shredded Cheddar cheese, if desired.
