This is not your everyday, boring grilled cheese. It's the best grilled cheese, ever! It has 3 different cheeses on the inside and is coated with butter and Parmesan cheese on the outside.
2 slices favorite bread (sourdough or sandwich bread)
1 slice of each: white cheddar, gouda and provel cheeses or favorite cheese
2 - 3 T. softened butter, plus more butter for greasing skillet
2 - 3 T. shredded Parmesan or Asiago cheese
Optional additions: caramelized onions, fresh spinach, tomato slices or bacon
Preheat non-stick skillet on medium-low. Place desired number of cheese slices on one piece of bread; top with the remaining bread slice.
Generously butter the outside of 1 side of the sandwich, using around 1 - 1½ T. butter, depending on the size of the bread. Make a thick enough coating of butter to press the shredded Parmesan or Asiago cheese into and have most of it stick.
Press around 1 - 1½ T. Parmesan cheese into the buttered bread, pressing so it sticks. Turn sandwich over; repeat butter and Parmesan cheese on the other side. Press down on the sandwich with a spatula to make cheese stick. Some cheese could fall off, just press it back on or throw it on top of the sandwich when it's in the skillet.
Lightly butter the pre-heated skillet; place the sandwich in the pan. Cook on medium-low until golden on the 1st side, this takes several minutes. Cooking on medium-low allows the inside cheese to melt without burning the outside cheese. Lift to peak on the bottom occasionally to see if it is ready to flip over. Flip the sandwich; continue cooking until the 2nd side is golden and cheeses are melted.
Makes 1 sandwich.
