These Turkey Pesto Tea Sandwiches are the perfect to serve for a luncheon, as an appetizer at a holiday party or to keep guests happy while preparing a big meal. They are simple to make and are festive looking.
frozen Pepperidge Farm Puff Pastry sheet, thawed
flour
turkey, thinly sliced to fit the sandwiches
Provolone cheese, sliced to fit the sandwiches or your favorite cheese
basil pesto, home made or store bought
cherry tomatoes, halved
whole fresh basil leaves or a small cucumber slice, optional
Preheat oven to 400 degrees. Line baking/cookie sheets with parchment paper.
Thaw each puff pastry sheet according to package directions (about 45 minutes).
Unroll sheets onto a lightly floured work surface; use a pizza cutter to cut each pastry sheet into 36 small squares. (6 square across and 6 squares down)
Bake the little squares on the prepared baking sheet for 12-14 minutes.
Once the pastry squares are baked and cooled, cut each square open (horizontally) to create a top and bottom piece of "bread" like a mini-sandwich.
Spread a think layer of basil pesto onto one side of the sandwich; add a slice of turkey and a slice of cheese to fit; top with a pastry square.
Finish the tea sandwiches with a small leaf of fresh basil or cucumber slice and a cherry tomato half. Hold together with a toothpick.
Place on a pretty platter. Serve.
Makes 36 tea sandwiches.
** You can bake the little Puff Pastries up to a day in advance, then assemble the tea sandwiches right before serving.
