Kentucky Benedictine Cucumber Tea Sandwiches

Description

These yummy tea sandwiches were first made in Kentucky around the turn of the century. Now it has become a tradition in Kentucky to serve them at many different gatherings. The mixture can also be served as a dip, if desired.

Ingredients

8 oz. package cream cheese, softened (plus a little more if wanting it a little creamier)
1/2 c. peeled, seeded, and very finely chopped or grated cucumber
1/8 - 1/4 c. minced green onion
1/8 c. chopped fresh dill
1 T. mayonnaise
1/4 t. salt
1/4 t. freshly ground black pepper

dash of green food coloring, if desired (optional)

24 white bread slices, your favorite

Stir together first 7 ingredients.

Spread mixture on 1 side of 24 bread slices; top with remaining 24 bread slices.

Using a serrated knife, trim crusts from sandwiches; cut each sandwich into 4 triangles.

Makes 4 dozen.
