Make a super simple mac and cheese, Italian style. Shell pasta, Italian sausage, red bell pepper, garlic, marinara sauce and mozzarella cheese all come together to make the perfect pasta dinner.
1 lb. Italian sausage, bulk
1 large onion, diced
2 garlic cloves, minced
1 red bell pepper, diced
10 oz. shell pasta
16 oz. marinara or tomato sauce
4 c. low-sodium chicken stock/broth
1/2 c. half and half or heavy cream
1 c. shredded mozzarella cheese
salt and pepper, if desired
fresh parsley, chopped, for garnish
In a large skillet over medium heat, brown sausage until golden; discard grease.
Add onion, garlic, and bell pepper; cook 5 minutes or until soft. Add shells; stir until coated in sausage and peppers; pour marinara sauce and chicken stock/broth over mixture; stir.
Simmer until shells are al dente and most of the liquid is absorbed, about 20 minutes.
Stir in half and half and mozzarella cheese. Season with salt and pepper, if needed.
Serve, garnished with parsley.
