Description
Make a super simple mac and cheese, Italian style. Shell pasta, Italian sausage, red bell pepper, garlic, marinara sauce and mozzarella cheese all come together to make the perfect pasta dinner.
Ingredients
- 1 lb. Italian sausage, bulk
- 1 large onion, diced
- 2 garlic cloves, minced
- 1 red bell pepper, diced
- 10 oz. shell pasta
- 16 oz. marinara or tomato sauce
- 4 c. low-sodium chicken stock/broth
- 1/2 c. half and half or heavy cream
- 1 c. shredded mozzarella cheese
- salt and pepper, if desired
- fresh parsley, chopped, for garnish
Steps
- In a large skillet over medium heat, brown sausage until golden; discard grease.
- Add onion, garlic, and bell pepper; cook 5 minutes or until soft. Add shells; stir until coated in sausage and peppers; pour marinara sauce and chicken stock/broth over mixture; stir.
- Simmer until shells are al dente and most of the liquid is absorbed, about 20 minutes.
