Description

This dish can be served for breakfast, lunch or dinner. If you like, serve it with eggs, any style. It's simple to prepare and so amazingly good.

Ingredients

2 lb. red potatoes
2 large bell peppers
1 1/2 onions

6 hot Italian turkey sausages, about 20 oz.
1 t. garlic powder
1 t. dried and crushed rosemary
1T. olive oil
salt and pepper, to taste

Clean and dry the vegetables; cut potatoes into ½ - ¾ inch pieces; cut onions and bell peppers into 1 inch pieces.

Place veggies in a large bowl; toss with olive oil, garlic powder, rosemary, salt and pepper, to taste.

Cut sausages into 5 - 6 pieces each; refrigerate.

When ready to bake, preheat oven to 375 degrees.

On a greased baking sheet pan, spread the veggies; bake for 20 minutes.

Remove the pan from the oven; top veggies with the sausage pieces; bake for 35 minutes, tossing halfway through.



Easy, peasy and delicious! I like this dish with eggs, so I cooked an egg on the side of the veggies, it was amazing!
