Description

Simple and quick complete meals are the way to go for dinner. This dinner is baked in just one foil lined baking pan, so clean up is a snap. Change the ingredients according to what is in season or to your personal taste.

Ingredients

1 package skinless smoked sausage, (sliced) like Eckrich sausage
8 Yukon gold potatoes, scrubbed and quartered
1 green pepper, diced
1 yellow pepper, diced

2 T. butter, cut into small cubes
2 t. olive oil

1 t. oregano
1 t. basil
½ t. black pepper

Preheat oven to 375 degrees. Line a baking pan with aluminum foil.

In the prepared pan, arrange sausage, potatoes and peppers in a single layer; place butter cubes over the top; drizzle with olive oil; sprinkle seasonings on top.

Bake covered with aluminum foil 40 - 50 minutes.

**Change up the ingredients to your personal tastes with: carrots, onion, zucchini, broccoli, or ham and perhaps a little cheese on top.
