Is it breakfast or dessert? It's breakfast, and it's really just as healthy as regular oatmeal. Instead of putting sugar in while preparing the oats, it is sprinkled on top and caramelized with a torch, giving it a crackly outside layer of sugar.
2 c. milk (any kind, almond, coconut or soy, or full fat dairy milk)
1 c. old fashioned rolled oats
1/2 t. cinnamon
1/4 t. vanilla extract
4 t. granulated sugar, divided (regular granulated white sugar caramelizes the best)
cream or half and half, for garnish, if desired
Heat milk in a saucepan until little bubbles form around the edges; add the oats; cook gently for about 5 minutes, until the oatmeal is thickened. Stir in cinnamon and vanilla; spoon into 2 serving bowls.
Smooth the top of each bowl with the back of a spoon to form a flat surface for the sugar. Evenly sprinkle 2 t. sugar over each bowl.
Use a kitchen torch to caramelize the sugar, moving the flame in circles as the sugar turns color. Continue heating until the entire surface is browned and small black spots start to form. **
Serve hot with a bit of cream.
2 servings.
**This can be done under the broiler if you don't have a torch. It works, but it is tricky. You have to put the bowls up close to the flame. The torch works much better.
