Ingredients
2 - 8 oz. packages cream cheese, softened at room temperature
1 c. sour cream
2 c. Mexican Cheddar Jack shredded cheese, divided
1 lb. bacon, cooked and crumbled
6 jalapeno peppers, deseeded and diced
2 lb. bag tater tots
6 green onions, thinly sliced

Preheat oven to 425 degrees.
Line a casserole dish with tater tots; bake for 15 minutes.
While tater tots are baking, fry bacon, drain on a paper towel lined plate, and crumble into small pieces.
Dice peppers and slice the onions.
In a medium bowl, combine cream cheese, sour cream, 1½ c. Cheddar Jack cheese, bacon (reserve a little bit for topping), diced jalapeno peppers, and sliced onions (reserve a bit for the top). Stir to thoroughly combine.
Spread the jalapeno mixture over the top of the tater tots. Top with remaining ½ c. cheese. Spread the reserved bacon and onion on the top.
Bake for 20 minutes.
Serve hot.
