Don't feed your family those pre-packaged frozen breakfast tortillas when you can quickly and easily make your own. Fill your flour tortillas with ham, eggs, cheese and a little bit of chopped scallions. Serve with salsa, hot sauce and/or sour cream.
1 T. unsalted butter
2 c. chopped deli ham
6 large eggs, beaten
3 T. half and half
salt, to taste
black pepper, to taste
4 scallions, diced
12 - 6 inch flour tortillas
1 1/2 c. shredded Colby Jack, Pepper Jack cheese or Mexican cheese
non-stick cooking spray
Kosher salt
salsa or hot sauce, for serving
sour cream, for serving
Preheat oven to 425 degrees. Line a baking sheet with foil sprayed with non-stick cooking spray.
Heat butter in a large non-stick skillet over medium high heat; add ham; sauté until starting to crisp. Add eggs and half and half; stir to scramble. Season with a bit of salt and pepper, to taste.
Transfer to a medium mixing bowl; stir in scallions.
Microwave tortillas 20-30 seconds or until pliable, as directed on package.
Place about 1/4 c. filling in the lower third of each tortilla, followed by 2T. cheese; roll up tightly; place seam side down on the baking sheet, making sure the rolls are not touching each other. Spray lightly with non-stick cooking spray. Season with a little kosher salt.
Bake 12-14 minutes, or until golden and crispy.
