Make a fun lunch, dinner, snack or appetizer with these great bacon pizzadillas. It's so versatile, you can use your favorite ingredients and pizza toppings to suit you.
6 slices bacon, diced
6 eight inch flour tortillas
14 oz. pizza sauce
2 c. mozzarella cheese, shredded
2 t. dried oregano
1 t. garlic powder
1 pinch red pepper flakes, optional
1 t. or more butter, for the skillet
Fry bacon in a large skillet over medium heat, cooking until bacon is crispy; remove to a paper towel lined plate; crumble bacon.
Discard bacon grease; wipe out the skillet with paper towels.
Top tortilla with desired amount of pizza sauce, spreading out evenly; top with mozzarella cheese, crumbled bacon, a sprinkling of oregano and garlic powder and a pinch of red pepper flakes, if desired.
Heat butter in same skillet over medium heat, swirling to coat the pan. Add a tortilla to the skillet, topping-side up; cook 30 seconds to 1 minute, until cheese starts to melt and tortilla starts to puff.
Using a spatula, fold tortilla in half; continue to cook, flipping until both sides are brown. Remove; slice into 4 pieces. Repeat with remaining tortillas and ingredients.
Makes 8 pizza/tortillas (24 slices).
*Tip: Assemble tortillas on a paper plate so they will easily slide off of the plate into the skillet to cook.
** To keep them hot, place them on a warmed plate covered in aluminum foil.
