Turkey or Chicken Pot Pie

Description

Pot pie is a satisfying comfort food for many people. It's much better tasting and better for you when it is homemade. It would be great served on those cold wintry days that are coming up.

Ingredients

2 strips bacon, diced
2 T. olive oil
1 small diced yellow onion
1 stalk celery, diced
1 small carrot, diced
1 t. dried thyme
1/2 t. ground sage
1 t. Kosher salt, plus more to taste
1/2 t. ground black pepper, plus more to taste
1/3 c. all-purpose flour
1/3 c. chicken or turkey stock
1 c. non-fat milk
1/2 c. frozen corn, thawed
1 c. frozen peas, thawed
1 c. chopped cooked green beans
2 c. shredded cooked turkey or chicken (leftover is great to use)
1 package (2 crusts) refrigerated pie crusts (or two from scratch pie crusts), thawed according to package directions

Preheat oven to 375 degrees.

Preheat sauce pan over medium heat. Cook bacon until browned; remove from pan to a plate, leaving bacon grease in the pan; set aside. (You may crumble the bacon and add it into the pot pie with the other ingredients, if desired.)

Add olive oil to the pan; add onion, celery, and carrot; stir to coat with oil; cook, stirring occasionally, until tender, about 3-5 minutes. Sprinkle with thyme, sage, salt, pepper, and flour; stir to coat; cook 1 minute. Add stock and milk; cook and stir until thickened, just a few minutes. Remove pan from heat; stir in vegetables, bacon, and turkey or chicken.

Place 1 crust in the bottom and up the sides of a 9 inch pie plate. Spoon hot filling into crust. Place 2nd crust over the top, press the edges together, and crimp as desired. Cut slits in the top of the pie for air to escape.

Place pie on a cookie sheet in case of spillage; bake 40-55 minutes, or until golden brown.

Remove from oven. Serve warm.

*Store leftovers in an airtight container for up to 3 days or freeze for up to one month.

**Entire pie may be made and frozen in advance, either before or after baking.

***Vegetable option: use 2 1/2 c. of your any of your favorite fresh cooked or thawed frozen.
