Make an easy and almost effortless meal in your slow cooker. The chicken and potatoes are tender and delicious. Serve with a side salad.
1/3 c. + 2 T. extra virgin olive oil
2 lb. bone-in chicken thighs
kosher salt
freshly ground black pepper
1 lb. baby red potatoes, quartered
5 cloves garlic, chopped
2 T. chopped fresh thyme
grated Parmesan cheese, for serving
chopped fresh parsley, for serving
In a large skillet over medium-high heat, heat olive oil. Add chicken; season with salt and pepper; sear until golden, 3 - 4 minutes; flip and sear 3 more minutes.
Meanwhile, in a 6 quart slow cooker, toss potatoes with olive oil, garlic and thyme; season generously with salt and pepper; add chicken; toss gently; cover; cook on High 4 hours or on Low 8 hours, until potatoes are tender and chicken is fully cooked.
Garnish with grated Parmesan cheese and parsley. Serve.
