non-stick cooking spray
2 large eggs
3 T. freshly chopped spinach
1 T. whole milk
salt
black pepper
1 T. crumbled feta cheese

Spray the inside of a 12 - 16 oz. microwave-safe mug with non-stick cooking spray. Crack the eggs into the mug; whisk to beat until completely combined. Whisk in the spinach and milk; season with pepper.

Microwave, uncovered, on High power for 1 minute. Stir the eggs; top with feta cheese. Microwave on High power until eggs are completely set, 30 - 60 seconds more. Season with salt. Serve immediately.
