Low-Carb Chicken and Broccoli Cheesy Casserole

Ingredients

3 c. cubed chicken
16 oz. frozen broccoli
1 medium onion diced (about 1 c.)
2 c. shredded Mozzarella cheese
1 t. garlic powder
1 chicken bouillon cube or 1 t. bouillon powder
1/2 c. water, optional
1 T. olive oil
1/4 t. pepper
1/4 c. sour cream
1 c. ricotta
bacon grease or non-stick cooking spray

Preheat oven to 350 degrees.

Grease a 9 x 13 inch casserole dish with leftover bacon grease for more flavor, or use non-stick spray.

Add broccoli, onion, chicken bouillon, water, olive oil and pepper to a medium skillet; cook covered for about 10 minutes, stirring occasionally.

In a medium bowl, mix cubed chicken, garlic powder, sour cream and ricotta cheese together, mixing until blended.

After cooking vegetables for 10 minutes, pour the broccoli mix into the bowl with the chicken; stir until blended; add 1/4 c. shredded Mozzarella cheese to the mix; stir.

Transfer mix to the greased dish; spread evenly. Add the remaining mozzarella cheese to the top. Place in the oven.Bake for 50 – 60 minutes. When the top layer of cheese is browned a little, it should be done.

Serve warm.
