Make chicken in the oven that turns out crispy with no breading. It's prepared with just a few simple ingredients, skin-on and bone-in chicken thighs, a bit of olive oil and seasonings.
2 1/2 - 3 lb. bone-in chicken thighs with skin
1 T. olive oil
1 1/2 t. Italian seasoning
3/4 t. kosher salt
1/4 t. freshly ground black pepper
Preheat oven to 400 degrees. Line a large baking tray/dish or sheet pan with aluminum foil.
Place chicken pieces on prepared baking sheet skin side down; season with salt, pepper, and spices; flip pieces skin side up. Drizzle a little oil over the skin on each piece, then rub lightly to coat. Sprinkle again with salt, pepper, and spices.
Bake 1 hour, until the skin is golden brown and crisp.
Remove from the oven; let rest about 5 minutes before serving.
