This amazing pork dish is easy and quick to prepare. Everyone will love it so much, you just might not have any leftovers!
2 lb. pork tenderloins
1/2 t. salt
1/3 c. apricot preserves
3 garlic cloves, minced
1 T. water
1 T. soy sauce
1 T. freshly grated fresh ginger
green onion, for garnish
Preheat oven to 425 degrees.
Sprinkle salt on pork tenderloins; place tenderloins on a lightly greased rack in a foil-lined roasting pan.
Combine preserves and next 4 ingredients; spread evenly over pork.
Bake 25 minutes or until a meat thermometer inserted in thickest portion registers 155 degrees. Remove from oven; cover let stand 10 minutes or until thermometer registers 160 degrees. Garnish, if desired with chopped green onion.
