This recipe is simple to make and delicious. Bacon lovers will surely thank you for it.
1 boneless chicken breast
1/2 lb. thick cut bacon
2 c. cooked rice
1/4 c. soy sauce
2-3 T. balsamic vinegar
1 small chili pepper (jalapeno, cayenne, or serrano)
optional: 1 c. extra diced veggies, like cabbage, bell pepper, mushrooms, onions, carrots
Cook the rice or use leftover rice; set aside to cool.
In a skillet, cook bacon until crisp; set aside on a paper towel lined plate to drain; crumble.
Remove bacon grease, leaving about 1 T. in the skillet. Cook chicken until browned on both sides; remove; slice thinly or shred.
In the skillet, add soy sauce and balsamic vinegar; cook the peppers and other veggies you may have added until fragrant, about 5-9 minutes. Add the rice; mix well. Add the chicken and bacon; mix well.
Serve.
