This meal is so easy to prepare, you'll be surprised. Make it all on a large baking sheet and clean up will be easy too. Feel free to substitute or add any of your favorite spices or herbs.
Vegetables:
1 medium-size red onion, diced
2 c. broccoli florets
1 yellow bell pepper, sliced
2 c. baby carrots
1 ½ c. cherry tomatoes
3-4 T. olive oil
salt and pepper, to taste
10 sprigs thyme
3 garlic cloves
rosemary, to taste
Chicken:
4 chicken breasts
olive oil
salt and pepper, to taste
pinch of paprika
rosemary, to taste
any other favorite spices, to taste

4 garlic cloves
Preheat oven to 400 degrees.
Place onion, broccoli, bell pepper, carrots, and tomatoes evenly on a baking tray. Don't let vegetables overlap too much so that they roast properly. Season with olive oil, salt and pepper, to taste. Place sprigs of thyme and garlic clove halves on top of the vegetables; sprinkle with rosemary.
Tear off 4 pieces of aluminum foil, each approximately 12 inches x 12 inches. Lay down the foil; place a chicken breast in the center for each piece. Season both sides of breasts with olive oil, salt, pepper, rosemary and paprika, to taste. Add sprigs of thyme and garlic a clove on top of each chicken breast. several times. Fold in the left and right sides several times, to seal the foil pack. Place all 4 foil packs on a baking tray.
Bake for 30 minutes.
