This yummy dish can be served as a side dish or as a light main dish. It's easy to make and can be ready in about 20 minutes.
4-6 slices applewood bacon, cut into 1 inch strips
4 c. fresh corn kernels
Kosher salt
freshly ground black pepper
pinch of red-pepper flakes
2 - 3 green onions, sliced
Cook bacon in a large skillet over medium-high heat, turning occasionally, until browned, 4 - 6 minutes.
Add corn kernels; season with salt, pepper, and a pinch of crushed red pepper. Cook, stirring often, until corn is tender, 5 - 8 minutes.
Stir in green onions. Serve immediately.
