Whether you need a party dish or an easy weeknight meal, these sliders will make everyone happy. Serve with your favorite sides, like chips, dill pickles, or a salad.
Topping:
¼ c. butter, melted
1 T. Dijon mustard
½ t. garlic powder
1 t. dried minced onion
½ t. caraway seeds, optional
12 dinner rolls
8 oz. corned beef, thinly sliced
8 oz. Swiss cheese
⅓ c. Thousand Island or Russian dressing
1 c. sauerkraut, drained and squeezed dry
Preheat oven to 350 degrees. Line a 9 x 13 inch pan with parchment paper.
Whisk together topping ingredients in a small bowl.
Cut the rolls in half horizontally, separating the tops and bottoms. (Keep the sides attached to each other, if possible.) Place the bottom half of the rolls in the prepared pan; spread the dressing on rolls; top with cheese, sauerkraut, corned beef and more cheese.
Top with the other half of the rolls; gently spoon or brush the butter mixture on the tops.
Bake about 20-25 minutes or until the cheese has melted and the tops are lightly browned.
Cut sliders apart. Serve warm.
Makes 12 sliders, about 6 servings.
