Combine your favorite Cobb salad with pasta and you have a fantastic dish. The dressing is light and creamy and wonderfully seasoned with dill, garlic and onion. It can be ready to serve in about 30 minutes.
1 lb. rotini pasta or your favorite
½ cu. real mayonnaise
6 T. buttermilk
4 T. sour cream
2 t. dried dill
1 t. garlic powder
½ t. salt
1 t. onion powder
2 t. red wine vinegar
2 hard-boiled eggs, chopped
1 avocado, peeled and diced
1 pint cherry tomatoes, sliced in halves
6 slices cooked bacon, drained and chopped
4 oz. crumbled blue cheese, optional
grilled corn, optional
Bring a large pot of well salted water to a rolling boil. Cook pasta until al dente, according to package directions. Rinse pasta under cold water.
Add mayonnaise, buttermilk, sour cream, dill, garlic powder, salt, onion powder and red wine vinegar to a jar or shaker. Seal; shake until combined.
Toss pasta with dressing; add in remaining ingredients. Season with salt and pepper, to taste.
Chill until ready to serve.
