A Cuban pizza starts with a crust that's covered with sofrito sauce made with onion, garlic and bell pepper that's been sauteed in olive oil, then tomato and spices. Mozzarella, Gouda and Parmesan cheeses sprinkled on make it totally irresistible.
2 pkgs. pre-made pizza crust or use refrigerated dough like Boboli Original Pizza Crust
olive oil
6 garlic cloves, minced
1 small yellow onion, diced
1/2 green bell pepper, diced
1 small can tomato paste
1 small can tomato sauce
3 T. dry white wine
1 t. whole cumin
1 t. oregano
salt, to taste
pepper, to taste
3/4 c. grated Gouda cheese
3/4 c. grated Mozzarella cheese
1/2 c. fresh grated Parmesan cheese
Preheat oven to 450 degrees.
Sofrito sauce:
In a large skillet, sauté garlic, onion, and bell pepper in olive oil over medium heat. Cook and stir until onion is translucent, making sure not to burn the garlic. Add tomato sauce and paste, white wine, cumin, oregano, salt and pepper. Cook over medium heat for about 5 minutes or until well blended and heated through. Spread this sauce over pizza dough.
Mix gouda and mozzarella cheeses together; spread over the pizzas. Sprinkle on the grated Parmesan cheese. Sprinkle on a little bit more oregano.
Bake for about 15 minutes or until cheese is melted and toasted.
Remove from oven; let cool for a bit; slice; serve.
